Shrimp and Chicken Fried Rice

This dish is a delicious and easy way to get your protein, veggies, and carbs all in one tasty dish. The combination of shrimp and chicken adds depth of flavor, and the fried rice is perfectly seasoned with soy sauce, garlic, ginger, and sesame oil.
Ingredients
- 2 cups cooked white rice (preferably leftover and chilled)
- 2 tablespoons vegetable oil
- 1/2 pound cooked and peeled shrimp (fresh or thawed if frozen)
- 1/2 pound boneless, skinless chicken breast, chopped into small pieces
- 3 garlic cloves, minced
- 1 teaspoon ginger, grated
- 1/2 cup frozen peas and carrots
- 1/2 cup green onions, chopped
- 2 large eggs, lightly beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Heat a wok or large skillet over high heat until hot. Add 1 tablespoon of oil and swirl to coat.
- Add the chicken to the pan and stir-fry until it's golden brown. Remove the chicken from the pan and set aside.
- Wipe the pan clean and heat another tablespoon of oil over high heat. Add the shrimp and stir-fry until they are pink and just cooked through. Remove the shrimp from the pan and set aside.
- Add the remaining tablespoon of oil to the pan. Add the garlic and ginger and stir-fry for 30 seconds.
- Add the frozen peas and carrots and green onions, and stir fry until they are tender.
- Push the veggies to the side of the pan and pour the beaten eggs in the center of the pan. Scramble the eggs until they are cooked.
- Add the cold rice to the pan and stir to combine. Cook for about 2 minutes, stirring constantly, until the rice is heated through.
- Add the chicken, shrimp, soy sauce, sesame oil, and salt and pepper to taste. Stir to combine and cook for an additional 1-2 minutes until everything is heated through.
The end result is a fragrant and flavorful dish that combines tender shrimp, juicy chicken, and perfectly seasoned rice. Enjoy!
