Sometimes, less really is more! This delightful little cake is perfect for birthday parties, bringing smiles all around while also being mindful of allergies. Easy, delicious, and oh-so-satisfying!
Ingredients
- 2 tablespoons all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons sugar (or adjust to taste)
- 1/4 teaspoon baking powder
- A pinch of salt
- 2 tablespoons Greek yogurt (or 2 tablespoons egg replacer mixed with 2 tablespoons water)
- 2 tablespoons milk (or a non-dairy alternative)
- 1/2 teaspoon vanilla extract
- Optional: Mini chocolate chips or sprinkles for decoration
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a ramekin with cooking spray or butter.
- In a small mixing bowl, combine the flour, cocoa powder, sugar, baking powder, and salt.
- In another bowl, mix the Greek yogurt (or egg replacer), milk, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- If you'd like, fold in some mini chocolate chips for a delightful surprise!
- Transfer the batter into your prepared ramekin, filling it about halfway.
- Bake in the preheated oven for about 15-18 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool for a few minutes before serving. You can top it with a dollop of Greek yogurt or some fresh fruit for a fun birthday treat!
