Slow Cooker Lemon Garlic Herb Chicken with Veggies

This lovely slow cooker meal is perfect for a busy day! The fragrant lemon and garlic elevate the tender chicken and vegetables to a new level of deliciousness. It’s satisfying, healthy, and oh-so-easy to prepare.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup baby carrots
- 1 cup chopped broccoli
- 1 cup diced potatoes (yukon gold or red)
- 1 lemon (juiced and zested)
- 4 cloves garlic (minced)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- ½ teaspoon salt (to taste)
- ½ teaspoon black pepper (to taste)
- 2 tablespoons olive oil
- ½ cup chicken broth
Cooking Instructions:
- In a small bowl, mix together the lemon juice, lemon zest, minced garlic, thyme, rosemary, salt, and pepper.
- Place the chicken breasts at the bottom of the slow cooker.
- Pour the lemon garlic mixture over the chicken, making sure they are well coated.
- Add the baby carrots, chopped broccoli, and diced potatoes around the chicken.
- Drizzle the olive oil over the veggies and pour the chicken broth into the slow cooker.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and cooked through.
- Once done, gently shred the chicken with two forks and mix everything together in the slow cooker to combine flavors.
