South Melbourne Style Dim Sims

Ingredients:
- 500g ground pork
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- 1/2 cup finely chopped cabbage
- 1/4 cup finely chopped water chestnuts
- Dim sim wrappers
- Soy sauce, for dipping
Instructions:
- In a large mixing bowl, combine the ground pork, onion, garlic, soy sauce, oyster sauce, sesame oil, sugar, salt, and white pepper. Mix well until everything is evenly incorporated.
- Add in the chopped cabbage and water chestnuts, and mix until well distributed in the pork mixture.
- Take a dim sim wrapper and place a spoonful of the pork filling in the center. Fold the edges of the wrapper towards the center, pleating as you go, and seal the dim sim.
- Repeat the process with the remaining filling and wrappers.
- If steaming, place the dim sims in a steamer basket lined with parchment paper and steam for about 15-20 minutes until cooked through.
- If frying, heat oil in a pan and fry the dim sims until golden brown and crispy on the outside.
- Serve the dim sims hot with soy sauce for dipping.
