Sparkling Mint Lemonade

Ingredients
- 1 cup fresh lemon juice (about 4-6 lemons)
- 1 cup granulated sugar (adjust to taste)
- 2 cups fresh mint leaves, loosely packed
- 4 cups sparkling water (chilled)
- Ice cubes
- Lemon slices and mint sprigs for garnish
Instructions
- In a medium saucepan, combine 1 cup of water with the sugar and fresh mint leaves. Bring to a gentle simmer over low heat, stirring until the sugar dissolves completely.
- Once sugar has dissolved, remove from heat and let the mint steep for about 30 minutes to infuse its flavor.
- Strain the mint syrup through a fine-mesh sieve into a large pitcher, discarding the mint leaves.
- Add the fresh lemon juice to the pitcher and mix well.
- Chill the mixture in the refrigerator for about an hour.
- When ready to serve, fill glasses with ice cubes and pour the chilled lemon-mint mixture until about halfway full.
- Top each glass with sparkling water and gently stir to combine.
- Garnish with lemon slices and mint sprigs for a beautiful presentation.
