Spicy Broccoli and Mushroom Noodles

Ingredients
- 300 g noodles of your choice (whole grain or rice noodles for a lighter option)
- 200 g broccoli florets
- 150 g sliced mushrooms (shiitake or button mushrooms)
- 30 mL (2 tablespoons) soy sauce (low sodium if preferred)
- 15 mL (1 tablespoon) chili paste or Sriracha (adjust for spice level)
- 30 mL (2 tablespoons) sesame oil (or olive oil)
- 9 g (3 cloves) garlic, minced
- 6 g (1 teaspoon) ginger, minced
- 4 green onions, chopped (for garnish)
- Sesame seeds (for garnish, optional)
Cooking Instructions
- Cook the noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat the sesame oil over medium-high heat.
- Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
- Toss in the sliced mushrooms and broccoli florets, sautéing until the mushrooms are tender and broccoli is bright green, about 4-5 minutes.
- Add the cooked noodles to the veggies in the skillet.
- Pour in the soy sauce and chili paste, tossing everything together until well coated and heated through, about 2-3 minutes.
- Serve hot, garnished with chopped green onions and sesame seeds if using.
