Spicy Halal Beef Biryani Medley

This special biryani captures the essence of traditional, Pakistani, and Hyderabadi styles all in one delicious dish. It’s a labor of love, but oh, it is worth every bit of effort!
Ingredients

For the Beef Marinade:
- 1 kg beef (chuck or brisket, cut into pieces)
- 1 cup yogurt
- 2 large onions (finely sliced)
- 4-5 green chilies (slit)
- 1 tablespoon ginger-garlic paste
- 2 tablespoons biryani masala (store-bought or homemade)
- 1 tablespoon red chili powder (adjust to spice preference)
- Salt to taste
- 1/4 cup chopped mint leaves
- 1/4 cup chopped coriander leaves
- Juice of 1 lemon

For the Rice:
- 4 cups basmati rice
- 6 cups water
- 1-2 bay leaves
- 4-5 green cardamom pods
- 5-6 cloves
- 1-2 cinnamon sticks
- Salt to taste
- A few drops of saffron in 1/4 cup warm milk (optional)

For Layering:
- 1/4 cup ghee or cooking oil
- Fried onions (store-bought or homemade)
- Additional mint and coriander leaves for garnish
Cooking Instructions

Marinate the Beef:
- In a large bowl, mix the yogurt, fine onion slices, ginger-garlic paste, green chilies, biryani masala, red chili powder, salt, lemon juice, mint, and coriander.
- Add the beef pieces, ensuring they're well coated. Cover and marinate for at least 2 hours, or overnight for the best flavor.

Cook the Rice:
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch. Soak in water for about 30 minutes.
- In a large pot, bring the water to a boil. Add the soaked rice, salt, bay leaves, cardamom, cloves, and cinnamon. Cook until the rice is about 70% cooked (it should still have a bite to it). Drain the rice and set aside.

Cook the Beef:
- In a large heavy-bottomed pot, heat ghee or oil over medium heat. Add the marinated beef (discard leftover marinade) and cook until browned and juices have released (about 10-15 minutes).
- Cover the pot and reduce heat, allowing the beef to cook in its juices until it's tender (about 45 minutes to 1 hour), stirring occasionally. Add a little water if needed.
