Spicy Indian Tomato Curry

This aromatic tomato curry is perfect for those looking for a spicy kick in their meal. It's packed with flavors and pairs well with rice or bread.
Ingredients
- 4 large tomatoes, roughly chopped
- 1 large onion, finely chopped
- 3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 green chilies, slit lengthwise (adjust to your spice preference)
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to your spice preference)
- 1 teaspoon garam masala
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 cup vegetable oil
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat vegetable oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds until fragrant.
- Add the finely chopped onion and sauté until it turns golden brown, stirring occasionally.
- Add the minced garlic, grated ginger, and slit green chilies. Sauté for a minute until the raw smell of garlic goes away.
- Add turmeric powder, red chili powder, garam masala, ground coriander, ground cumin, and paprika. Mix well and sauté for another minute.
- Add the chopped tomatoes and season with salt. Mix everything together, cover the pan, and let it cook for about 10-15 minutes or until the tomatoes become soft and mushy.
- Once the tomatoes are cooked, use a blender or immersion blender to puree the mixture until smooth. If you like a chunkier texture, you can skip this step.
- Return the pureed tomato mixture to the pan and simmer for an additional 5 minutes, allowing the flavors to meld together.
- Taste and adjust the seasoning according to your preference.
- Garnish with freshly chopped cilantro before serving.
- Serve the spicy Indian Tomato Curry hot with rice or bread of your choice.
