Spicy Stovetop Cauliflower Roast

Ingredients:
- 1 medium cauliflower head, cut into florets
- 2 tablespoons coconut oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, minced
- 1 or 2 green chilies, finely chopped (adjust to your spice preference)
- 1 teaspoon chili powder (adjust to your spice preference)
- 1/2 teaspoon turmeric powder
- Salt to taste
- Fresh cilantro leaves, for garnish
Instructions:
- Heat coconut oil in a large pan or skillet over medium-high heat.
- Add the chopped onion and sauté until it turns translucent.
- Add the minced garlic, ginger, and green chilies to the pan. Sauté for another minute until fragrant.
- Add the cauliflower florets to the pan and toss them well with the onion mixture.
- Sprinkle chili powder, turmeric powder, and salt over the cauliflower. Mix everything together until the cauliflower is evenly coated with the spices.
- Cover the pan and cook for about 10-12 minutes, or until the cauliflower is tender, stirring occasionally to prevent sticking.
- Once the cauliflower is cooked to your desired tenderness, remove the lid and give it a quick stir.
- Garnish with fresh cilantro leaves and serve hot.
