Spicy Stovetop Mac and Cheese

This version of the classic stovetop mac and cheese has a spicy kick to it! The heat comes from a combination of cayenne pepper, paprika, and hot sauce.
Ingredients
- 1 lb elbow macaroni
- 4 tbsp unsalted butter
- 4 tbsp all-purpose flour
- 2 cups whole milk
- 2 cups sharp cheddar cheese, shredded
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 tbsp hot sauce (more or less to taste)
- Salt and pepper to taste
Instructions
- Cook macaroni according to package directions, making sure to salt the water generously. Drain and set aside.
- In a large saucepan, melt butter over medium heat. Add flour, cayenne pepper, and paprika, and whisk to combine. Cook for 1-2 minutes, whisking constantly, until mixture becomes light brown and fragrant.
- Gradually whisk in milk, stirring constantly to prevent lumps. Cook for 5-7 minutes, whisking occasionally, until the sauce thickens.
- Add cheddar cheese, whisking until the cheese is melted and fully incorporated into the sauce.
- Add hot sauce to the cheese sauce and stir to combine. Taste and adjust seasoning with salt and pepper as necessary.
- Add cooked macaroni to the sauce, stirring to combine.
- Serve hot, garnished with a sprinkle of chopped parsley.
The addition of cayenne pepper and paprika gives this mac and cheese a smoky kick, while the hot sauce adds a little bit of tanginess. Be sure to taste and adjust as necessary to get it to your desired spice level. Enjoy!
