Ingredients
- 2 chicken breasts, boneless and skinless
- 2 cups fresh spinach, washed and drained
- 2 medium tomatoes, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon shwarma spices (or to taste)
- Salt and pepper, to taste
- A pinch of red pepper flakes (optional, for a bit of heat)
- Fresh lemon juice, for serving
- Fresh herbs (like parsley or basil) for garnish
Cooking Instructions
- Season the chicken breasts with salt, pepper, and shwarma spices on both sides.
- In a large skillet, heat olive oil over medium heat. Once hot, add the seasoned chicken breasts. Cook for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and cook for about 30 seconds, until fragrant.
- Add the chopped tomatoes to the skillet and cook for about 3-4 minutes, until they start to soften.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Return the chicken to the skillet, allowing it to warm up with the vegetables for a couple of minutes. Adjust seasoning with salt, pepper, and red pepper flakes if desired.
- Squeeze fresh lemon juice over the dish before serving.
- Garnish with fresh herbs for a lovely finish.
