Stovetop Basque Cheesecake

This delightful cheesecake is creamy and rich with a beautifully burnt top, resembling the traditional Basque cheesecake but made right on your stovetop. It’s comfort food at its finest!
Ingredients
- 16 oz (450g) cream cheese: Make sure it’s softened at room temperature for easy mixing.
- 1 cup (240ml) heavy cream: This adds the luxurious creaminess you want.
- 3/4 cup (150g) granulated sugar: This provides that classic sweetness.
- 1/4 cup (50g) brown sugar: Adds a hint of caramel flavor.
- 3 large eggs: Use large eggs for the best texture.
- 1 teaspoon vanilla extract: For aromatic sweetness; check for high-quality extract.
- 1 tablespoon lemon juice: Freshly squeezed if possible, to add brightness.
- 1/4 cup (30g) cornstarch: This helps in setting the cake and achieving the right consistency.
- Pinch of salt: Enhances the flavors.
- Butter for greasing the pan: About 1 tablespoon, or more as needed.
Cooking Instructions

Prepare the Pan:
- Grease a 9-inch (23 cm) skillet or frying pan generously with butter to prevent sticking.
- Cut a round piece of parchment paper and place it at the bottom of the pan. Grease the top of the parchment to ensure easy removal later.

Mix the Cream Cheese:
- In a large mixing bowl, use an electric mixer to beat the softened cream cheese starting on low speed to prevent splattering. Gradually increase to medium speed until it’s completely smooth and creamy, about 2-3 minutes. Scrape down the sides of the bowl with a spatula to ensure all the cream cheese is well incorporated.

Add Cream & Sugars:
- With the mixer running on low, slowly pour in the heavy cream, and then add both the granulated sugar and brown sugar. Mix until the mixture is velvety and uniform, about another 2-3 minutes.

Incorporate Eggs:
- Add the eggs one at a time. Beat after each addition on medium speed for about 30 seconds until fully combined. Don’t overmix, just until the mixture looks glossy. You may need to scrape the sides of the bowl once to incorporate any unmixed ingredients.
