Sweet Potato and Garden Pea Soup

This comforting soup is perfect for any time of the year and makes use of those sweet potatoes and garden peas delightfully. It’s simple to prepare and packed with flavor!
Ingredients
- 2 medium sweet potatoes, peeled and diced
- 2 cups garden peas (fresh or frozen)
- 2 cups vegetable broth (or water)
- 1-2 tablespoons extra virgin olive oil
- 1-2 garlic shoots, chopped (or garlic if you prefer)
- Salt, to taste
- Black pepper, to taste
- Fresh chilis, sliced (for some spice, optional)
- A squeeze of unwaxed lemon for brightness (optional)
Cooking Instructions
- In a large pot, heat the extra virgin olive oil over medium heat.
- Add the chopped garlic shoots and sauté for about 2-3 minutes until fragrant.
- Add the diced sweet potatoes to the pot and stir well. Cook for about 5 minutes until they start to soften.
- Pour in the vegetable broth (or water) and bring the mixture to a boil. Reduce to a simmer and cook for about 15 minutes or until the sweet potatoes are tender.
- Add the garden peas to the pot and cook for an additional 5 minutes.
- Using an immersion blender, carefully blend the soup until smooth and creamy. If you don’t have an immersion blender, you can blend it in batches using a regular blender.
- Season with salt, black pepper, and add fresh chilis if desired.
- Serve hot, and add a good squeeze of unwaxed lemon juice before serving for an extra zesty flavor.
