Tangerine UpsideDown Cake

This cake is a delightful blend of sweetness and citrus tang, with caramelized tangerines that create a beautiful topping. It’ll not only taste delicious but also look stunning on your table!
Ingredients
- 4-5 tangerines (peeled, segmented, and seeds removed)
- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup brown sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk (or substitute with milk and a bit of vinegar)
- Optional: powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a 9-inch round cake pan, pour in the melted butter and sprinkle the brown sugar evenly over it.
- Arrange the tangerine segments in a decorative pattern over the brown sugar.
- In a mixing bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, cream together the granulated sugar and eggs until light and fluffy. Add in the vanilla extract.
- Gradually add the dry ingredients to the egg mixture, alternating with buttermilk, and mix until just combined.
- Pour the batter over the tangerine segments in the pan, spreading it evenly.
- Bake for 35-40 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes. Next, carefully invert onto a serving plate to reveal the beautiful tangerine topping.
- Allow to cool slightly before serving. You can dust with powdered sugar if desired.
