The Story of CocaCola Rice Pasta Cakes

This recipe is inspired by a dish that I used to make with my grandmother when I was a child. She would take leftover rice pasta and turn it into crispy little cakes to serve as a snack or appetizer. I decided to create my twist on this classic recipe by incorporating Coca-Cola, which adds a unique flavor that pairs perfectly with the silky textures of the rice pasta.
Ingredients
- 8 oz. rice pasta
- 1/2 cup Coca-Cola
- 1/4 cup soy sauce
- 1 tbsp honey
- 1 tbsp sesame oil
- 1 tsp chili flakes
- 2 cloves garlic, minced
- 2 green onions, thinly sliced
- 1/4 cup chopped cilantro
Instructions
- Cook the rice pasta according to package directions until al dente, then drain and rinse with cold water.
- In a mixing bowl, whisk together Coca-Cola, soy sauce, honey, sesame oil, chili flakes, and minced garlic to make the sauce.
- Add the cooked rice pasta to the mixing bowl with the sauce and toss until the pasta is fully coated.
- Preheat a non-stick skillet over medium high heat.
- Once the skillet is hot, scoop a small amount of pasta mixture (about 1/2 cup) onto the skillet and press down to form a patty. Depending on the size of your skillet, you can cook multiple patties at once.
- Cook each patty for 3-4 minutes on each side, until golden brown and crisped on the outside.
- Once the patties are done, transfer them to a serving plate and sprinkle with chopped green onions and cilantro.
These rice pasta cakes will have a crispy outside with a chewy and flavorful inside. The sweetness of Coca-Cola pairs well with the salty and savory flavors of soy sauce and sesame oil. Enjoy these tasty little cakes as a snack or appetizer at your next party!
