Turkey and Enoki Mushroom Pasta

Ingredients
- 8 ounces of pasta (spaghetti or fettuccine works well)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 pound ground turkey
- 4-5 ounces enoki mushrooms, trimmed
- 1/2 cup chicken broth or white wine
- 1/4 cup heavy cream (optional)
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (for serving)
Instructions
- Cook the pasta according to package instructions until al dente, then drain and set aside, reserving a little pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the ground turkey to the skillet and cook until browned and cooked through, breaking it up with a spatula, about 5-7 minutes.
- Stir in the enoki mushrooms and cook for an additional 2-3 minutes until they begin to soften.
- Pour in the chicken broth (or white wine) and allow it to simmer for about 3-4 minutes until slightly reduced.
- If desired, stir in the heavy cream for a richer sauce and season with salt, pepper, and Italian seasoning.
- Toss the cooked pasta into the skillet, adding reserved pasta water a little at a time until you reach your desired sauce consistency.
- Serve hot, garnished with fresh parsley and grated Parmesan cheese.
