Turkey and Zucchini Meatballs

These flavorful turkey and zucchini meatballs are perfect for a quick and easy weeknight dinner. Plus, they're a great way to sneak some extra veggies into your meal.
Ingredients:
- 1 lb ground turkey
- 1 zucchini, grated
- 1/4 cup onion, grated
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp dried oregano
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions:
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the ground turkey, grated zucchini, grated onion, breadcrumbs, egg, minced garlic, chopped parsley, dried oregano, salt, and pepper. Mix until well combined.
- Roll the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the meatballs to the skillet and brown on all sides, about 5-6 minutes total.
- Transfer the meatballs to the preheated oven and bake for 12-15 minutes or until cooked through.
- Serve hot with your favorite side dishes.
