Bringing together the rich umami flavors of miso with tender beef and an array of colorful vegetables, this Japanese fusion stir-fry will take your taste buds on a delightful journey. Ingredients:
- 1 lb ground beef
- 1 small head of broccoli, cut into florets
- 1 small head of cauliflower, cut into florets
- 1 bunch of baby corn, halved lengthwise
- 1 cup green beans, trimmed and halved
- 1 cup mushrooms, sliced
- 2-3 baby bok choy, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons sesame oil
- 2 tablespoons miso paste
- 2 tablespoons mirin
- 1 tablespoon soy sauce (reduced-sodium or low-sodium)
- 1 teaspoon honey
- 1/4 cup water
- Toasted sesame seeds and sliced green onions for garnish
- Cooked rice or noodles of your choice, for serving
Instructions:
- In a small bowl, whisk together miso paste, mirin, soy sauce, honey, and water to make the miso glaze. Set aside.
- Heat 1 tablespoon of sesame oil in a large wok or skillet over medium-high heat. Add ground beef and cook until browned. Remove the beef from the pan and set aside.
- In the same pan, add the remaining tablespoon of sesame oil. Add garlic and ginger, sauté for 1 minute until fragrant.
- Add broccoli, cauliflower, green beans, baby corn, and mushrooms to the pan. Stir-fry for about 5-6 minutes until the vegetables are slightly tender.
- Return the cooked beef to the pan. Add the baby bok choy and pour the miso glaze over the stir-fry. Stir well to coat everything evenly.
- Cook for an additional 2-3 minutes until the sauce thickens slightly and the vegetables are cooked to your liking.
- Remove from heat and garnish with toasted sesame seeds and sliced green onions.
- Serve the stir-fry hot over cooked rice or noodles.
