Vegan Lasagna With Tofu Ricotta

Ingredients:
For the Tofu Ricotta:
- 1 block of shelf-stable silken tofu (12 oz), drained
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup nutritional yeast
For the Lasagna:
- 9-12 gluten-free lasagna noodles
- 1 jar (24 oz) of your favorite vegan marinara sauce
- 1/2 onion, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1/2 cup frozen spinach, thawed and drained
- 1/2 cup vegan mozzarella cheese (optional)
- 1/4 cup fresh basil, chopped
Instructions:
For the Tofu Ricotta:
- In a mixing bowl, mash the drained tofu with a fork until it is crumbly and small.
- Add minced garlic, lemon juice, salt, black pepper, and nutritional yeast. Stir all ingredients to combine.
For the Lasagna:
- Preheat your oven to 350°F.
- Cook lasagna noodles according to package instructions.
- In a large skillet, sauté the onions, bell peppers, and zucchini until they are tender. Season with salt and pepper to taste.
- In a 9x13 inch baking dish, spoon some marinara sauce on the bottom. Add a layer of cooked noodles on top.
- Spread some of the tofu ricotta mixture over the noodles, followed by a layer of the sautéed vegetables and some spinach. Cover with a layer of marinara sauce. Repeat these layers until all ingredients are used up, making sure the final layer is marinara sauce.
- Sprinkle vegan mozzarella cheese on top (if using).
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the aluminum foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly (if using).
- Remove from the oven and let it cool for 5-10 minutes before serving. Garnish with chopped fresh basil.
