Vegan Tofu Omelette

This vegan omelette is light, fluffy, and packed with flavor!
Ingredients:
- 1/4 block of firm tofu
- 3 tbsp unsweetened plain almond milk
- 1 tbsp nutritional yeast
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp ground turmeric
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1/4 cup chopped vegetables (mushrooms, spinach, tomatoes)
- Non-stick cooking spray
Instructions:
- Using a fork, crumble the firm tofu into a mixing bowl.
- Add in the almond milk, nutritional yeast, garlic powder, onion powder, turmeric, salt, and pepper. Mix everything together until well combined.
- Heat a medium-sized non-stick skillet over medium heat and spray it with cooking spray.
- Add the chopped vegetables to one side of the skillet and let them cook for 1-2 minutes until they are slightly softened.
- Pour the tofu mixture over the vegetables and use a spatula to spread it evenly across the skillet.
- Cook the omelette for about 3-4 minutes or until the edges are golden brown.
- Carefully fold the omelette in half using your spatula and then continue to cook it for another 1-2 minutes on each side until it's cooked through.
