Veganballs with Quinoa and Black Beans

These veganballs are full of flavor and packed with protein from quinoa and black beans. They are perfect for pairing with your Homemade Tomato Sauce.
Ingredients
- 1 cup cooked quinoa
- 1 can black beans, rinsed and drained
- 1/2 cup breadcrumbs (use gluten-free if necessary)
- 2 tablespoons grated vegan Parmesan cheese
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
- Olive oil, for baking
Instructions
- Preheat the oven to 375°F.
- In a large mixing bowl, combine the quinoa, black beans, breadcrumbs, vegan Parmesan, cumin, smoked paprika, onion powder, garlic powder, salt, pepper, and flax egg. Mix well with a wooden spoon.
- Line a baking sheet with parchment paper.
- Roll the mixture into balls, about the size of a golf ball, and place them on the prepared baking sheet.
- Lightly coat the balls with olive oil.
- Bake for 20-25 minutes, or until the veganballs are golden brown and cooked through.
