Vegetable Quesadillas

These scrumptious quesadillas are a delightful way to enjoy a variety of veggies, melted cheese, and a hint of spice. Perfect for an easy dinner, they can be customized to your heart's content. Serve them up with fresh salsa and creamy sour cream for the ultimate comfort food experience!
Ingredients
- 4 large flour tortillas
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1 bell pepper (any color), diced
- 1 small zucchini, diced
- 1 small onion, diced
- 1 cup baby spinach
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- Salsa and sour cream, for serving
Cooking Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper. Sauté for about 3-4 minutes, until they begin to soften.
- Add the diced zucchini and sprinkle in the garlic powder, cumin, salt, and pepper. Cook for another 3-4 minutes, then stir in the baby spinach and cook until just wilted. Remove the vegetable mixture from the skillet and set aside.
- In the same skillet, place one tortilla and sprinkle half of it with cheese. Add a generous amount of the vegetable mixture on top, then sprinkle some more cheese over the veggies. Fold the tortilla in half.
- Cook for about 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
- Cut each quesadilla into wedges and serve hot with salsa and sour cream.
