WineBraised Chicken with Crusty Bread

Ingredients
- 4 chicken thighs, skin-on and bone-in
- 2 tablespoons olive oil
- 1 onion, sliced
- 4 cloves garlic, minced
- 2 cups dry white wine
- 1 cup chicken broth
- 2 sprigs fresh thyme
- 1 sprig fresh rosemary
- Salt and pepper, to taste
- Crusty bread, for serving
- Optional: chopped parsley for garnish
Cooking Instructions
- Heat olive oil in a large Dutch oven or heavy pot over medium-high heat.
- Season the chicken thighs generously with salt and pepper. Brown them in the pot, skin-side down, for about 5-7 minutes or until golden brown. Flip and cook for another 5 minutes. Remove and set aside.
- In the same pot, add the sliced onion and sauté until softened, about 4-5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Pour in the white wine, scraping the bottom of the pot to deglaze. Let it simmer for about 5 minutes.
- Stir in the chicken broth, thyme, and rosemary. Return the chicken to the pot, making sure it's submerged in the liquid.
- Bring to a simmer, then cover and reduce heat to low. Allow it to braise for 40-50 minutes, until the chicken is tender and cooked through.
- Serve the chicken with crusty bread, perfect for soaking up the delicious sauce. Garnish with chopped parsley if desired.
