Zesty Lemon Drizzle Cake

Ingredients:
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- ½ cup milk
- Zest of 1 lemon
- 3 tablespoons fresh lemon juice
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
For the drizzle:
- 1 cup powdered sugar
- 2-3 tablespoons fresh lemon juice
Instructions:
- Preheat the oven to 350°F (175°C). Grease and flour a loaf pan or cake tin.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add in the eggs, one at a time, mixing well after each addition.
- Mix in the milk, lemon zest, and lemon juice until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Slowly add the dry mixture to the wet mixture, mixing until just combined.
- Pour the batter into the prepared pan and smooth the top. Bake for about 45-50 minutes or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the drizzle. In a small bowl, mix the powdered sugar and lemon juice until smooth.
- Once the cake is done, let it cool in the pan for about 10 minutes before transferring it to a wire rack. While still warm, drizzle the lemon glaze over the cake. Allow it to set before slicing and serving.
