Zesty Lemon Herb Roasted Chicken

Ingredients
- 1 whole chicken (about 4-5 pounds)
- 2 lemons (1 for juice, 1 halved)
- 6 cloves garlic, minced
- 1/4 cup olive oil
- 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
- 2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)
- Salt and pepper to taste
- 1 onion, quartered
- Fresh parsley for garnish (optional)
Cooking Instructions
- Preheat your oven to 425°F (220°C).
- In a small bowl, mix the minced garlic, olive oil, juice of one lemon, rosemary, thyme, salt, and pepper.
- Pat the chicken dry with paper towels and place it in a large roasting pan.
- Rub the herb and garlic mixture all over the chicken, making sure to get under the skin for extra flavor.
- Stuff the cavity of the chicken with the halved lemon and quartered onion.
- Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
- Remove the chicken from the oven and allow it to rest for about 10-15 minutes before carving.
- Garnish with fresh parsley if desired, and serve with your favorite side dishes.
