Leftover Lamb Curry

- 2 cups leftover lamb, diced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 can (400g) chopped tomatoes
- 1 can (400g) chickpeas, drained and rinsed (for added nutrition!)
- 1 tablespoon curry powder (or to taste)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon chili powder (adjust if you prefer milder)
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Fresh coriander leaves (if available, for garnish)
- Water or stock as needed

Instructions:
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent.
- Stir in the garlic and ginger, cooking for an additional minute until fragrant.
- Add the curry powder, cumin, coriander, and chili powder. Stir well to coat the onions, allowing the spices to bloom for about 1-2 minutes.
- Pour in the chopped tomatoes and chickpeas; stir to combine. Allow it to simmer for a few minutes to meld the flavors.
- Add the diced lamb to the pot. Pour in a small amount of water or stock to reach your desired consistency. Bring to a gentle simmer and let it cook for 10-15 minutes, stirring occasionally.
- Season with salt and pepper to taste. If you have fresh coriander, sprinkle it on top before serving.
- Serve hot with rice or bread, if available.
