Ingredients
- 2 boneless skinless chicken breasts
- 2 cups fresh spinach (you can also use frozen, just thaw and drain)
- 1 cup shredded cheddar cheese
- 1/2 cup Greek yogurt (or sour cream, if you prefer)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- Salt and pepper, to taste
- Olive oil, for drizzling
Cooking Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the spinach, Greek yogurt, garlic powder, onion powder, paprika, and a pinch of salt and pepper until well combined.
- Place the chicken breasts on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.
- Using a knife, create a pocket in each chicken breast by cutting horizontally, being careful not to cut all the way through.
- Stuff each chicken breast with the spinach and Greek yogurt mixture, then top with shredded cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
- Let the chicken rest for a few minutes before serving. Enjoy your meal!
