- 1 cup balsamic vinegar
- 2 tablespoons honey or brown sugar (for sweetness)
- A pinch of salt and pepper (optional)
Instructions:
- In a small saucepan, combine the balsamic vinegar and honey or brown sugar.
- Bring the mixture to a simmer over medium heat.
- Reduce the heat and let it simmer gently until it thickens and reduces by about half, about 10-15 minutes.
- Remove from the heat and let it cool slightly; it will thicken more as it cools.

Earthy Mushroom and Thyme Sauce:
- 1 cup of sliced mushrooms (any kind you enjoy)
- 2 tablespoons olive oil

- Salt and black pepper to taste
- Optional: 1/2 cup vegetable or chicken broth for a richer sauce
