Basic Kothu Chicken Fry

This Kothu Chicken Fry is a comforting South Indian classic that brings together tender chicken, savory onions, and the delightful kick of green chilies. It's perfect for a family meal or a cozy dinner.
Ingredients:
- 500g chicken, boneless and diced
- 2 large onions, finely sliced
- 4-5 green chilies, slit (adjust to your spice preference)
- 2 tablespoons oil (preferably coconut or vegetable oil)
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 tablespoon ginger-garlic paste
- 1 teaspoon garam masala
- Salt to taste
- Chopped fresh coriander for garnish (optional)
- 2-3 cups of leftover roti or parotta (optional, for authentic Kothu)
Cooking Instructions:
- Heat oil in a large skillet or wok over medium heat. Add the mustard seeds and cumin seeds; let them splutter.
- Add the onions and green chilies to the oil, sauté until the onions are soft and translucent.
- Stir in the ginger-garlic paste and cook for another 2 minutes until fragrant.
- Add the diced chicken to the pan, followed by turmeric powder and salt. Cook until the chicken is cooked through and no longer pink, about 10-15 minutes.
- Once the chicken is cooked, sprinkle the garam masala and mix well.
- If you're using leftover roti or parotta, chop them into small pieces and add them to the mix. Stir everything together until the pieces are well combined with the chicken.
- Garnish with fresh coriander if desired. Serve hot!
