BBQ Balsamic Chicken StirFry with Rice Peppers and Onions

Ingredients:
- 2 frozen chicken breasts, sliced into thin strips
- 1 cup long grain white rice
- 8.8 ounces frozen peppers and onions mix
- 1/2 cup BBQ sauce
- 3 tablespoons balsamic vinegar
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- Salt and pepper, to taste
- Optional: red pepper flakes for heat and chopped green onions for garnish
Instructions:
- Cook the white rice according to package instructions.
- In a small bowl, mix together the BBQ sauce, balsamic vinegar, soy sauce, and minced garlic to create the marinade.
- In a large skillet or wok, heat vegetable oil over medium-high heat.
- Add the frozen peppers and onions mix to the skillet and stir-fry until slightly softened.
- Push the vegetables to the side of the skillet and add the sliced chicken strips. Cook until the chicken is browned on all sides.
- Pour the BBQ balsamic marinade over the chicken and vegetables. Stir well to coat everything evenly.
- Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
- Season with salt, pepper, and red pepper flakes if desired.
- Serve the BBQ Balsamic Chicken Stir-Fry over the cooked white rice.
- Garnish with chopped green onions for an extra burst of flavor.
