BBQ Cheesy Broccoli and Potato Bake

Ingredients
- 2 cups of diced potatoes (about 2 large)
- 2 cups of broccoli florets
- 1 cup of shredded cheese (cheddar or your favorite)
- ¾ cup of BBQ sauce (adjust to taste)
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- Fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a pot of salted water, bring the potatoes to a boil and cook for about 10 minutes until just tender. Add broccoli florets to the pot for the last 3 minutes. Drain and set aside.
- In a large mixing bowl, combine the cooked potatoes and broccoli with olive oil, garlic powder, onion powder, salt, and pepper.
- Add the BBQ sauce to the mixture and stir until everything is evenly coated.
- Transfer the mixture into a baking dish and spread it out evenly. Sprinkle the shredded cheese on top.
- Bake in the preheated oven for about 15 minutes, or until the cheese is melted and bubbly.
- Once out of the oven, let it cool for a few minutes, then garnish with fresh parsley if desired.
