Beef and Liver Meatballs

- 1 pound ground beef (preferably grass-fed)
- 1/2 pound beef liver (finely chopped or pureed)

- 1 teaspoon salt (adjust to taste)
- Freshly ground black pepper (to taste)
- Optional: 1 tablespoon fresh parsley (chopped)
Cooking Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the ground beef, finely chopped liver, egg, minced garlic, onion powder, oregano, salt, and pepper. Mix thoroughly until well combined. If using parsley, add it at this stage.
- Form the mixture into meatballs, about 1-2 inches in diameter, and place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes or until they are cooked through (internal temperature should reach 160°F/70°C).
- Optional: If you like your meatballs with a bit of a crust, you can sear them in a hot skillet with a bit of beef tallow or butter for a few minutes after baking.
