Beef Mushroom and Asparagus StirFry

Ingredients
- 1 pound lean ground beef
- 1 cup mushrooms, sliced (such as button or cremini)
- 1 cup asparagus, trimmed and cut into 2-inch pieces
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated (optional)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (or more soy sauce for a vegetarian option)
- 1 tablespoon sesame oil (for cooking)
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Cooked rice or noodles, for serving
- Optional garnish: sliced green onions and sesame seeds
Cooking Instructions
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Add the garlic and ginger to the skillet and sauté for another minute until fragrant.
- Stir in the sliced mushrooms and cook for 3-4 minutes until they begin to soften.
- Add the asparagus and continue to cook for another 3-5 minutes, or until the asparagus is bright green and tender-crisp.
- Pour in the soy sauce and oyster sauce. Stir well to combine and cook for an additional 2 minutes.
- Drizzle with sesame oil and mix everything together well. Season with salt and pepper to taste.
- Serve hot over cooked rice or noodles, garnished with green onions and sesame seeds if desired.
