Beef StirFry with a Twist

Ingredients:
- 400g beef fillet, thinly sliced
- 1 carrot, julienned
- 2 cherry tomatoes, halved
- 2 eggs
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried cilantro (coriander)
- 1/2 teaspoon turmeric
- 1/2 teaspoon black pepper
- 1/2 teaspoon red paprika
- Salt to taste
- Cooking oil
- Optional: chopped green onions for garnish
Instructions:
- In a bowl, mix together soy sauce, rice vinegar, dried basil, oregano, cilantro, turmeric, black pepper, red paprika, and a pinch of salt. Add the sliced beef fillet to the marinade and let it sit for 15-20 minutes.
- Heat some cooking oil in a skillet over medium-high heat. Add the marinated beef slices (reserving the marinade) and stir-fry until browned and cooked through. Remove the beef from the skillet and set it aside.
- In the same skillet, add a bit more oil if needed. Crack the eggs into the skillet, scramble them until cooked, and set aside.
- Add the julienned carrots to the skillet and stir-fry for a few minutes until slightly tender.
- Return the cooked beef and scrambled eggs to the skillet. Add the cherry tomatoes and the reserved marinade. Stir everything together and cook for another minute.
- Taste and adjust seasoning if needed.
- Serve the beef stir-fry hot, garnished with chopped green onions if desired.
