Bulgarian Kavarma

Kavarma is a traditional Bulgarian stew that is made with a variety of meats and vegetables. It's a hearty and flavorful dish that is perfect for a cozy night in.
Ingredients
- 1 lb. pork shoulder, cut into bite-sized pieces
- 1 lb. chicken breast, cut into bite-sized pieces
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 3 tablespoons vegetable oil
- 1 tablespoon paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 cup chicken broth
- 2 tablespoons chopped parsley
Instructions
- Heat the vegetable oil in a large skillet or Dutch oven on medium-high heat.
- Add the pork and chicken and cook until browned on all sides.
- Add the sliced bell peppers, onion, garlic, paprika, cumin, salt, black pepper, oregano, and thyme.
- Cook until the vegetables are softened and fragrant, stirring occasionally.
- Stir in the canned tomatoes and chicken broth.
- Bring the stew to a simmer, reduce the heat to low, and cover.
- Cook for about 45 minutes to an hour, or until the meat is tender and the flavors have melded together.
- Taste, and season with more salt and pepper if needed.
- Garnish with chopped parsley and serve hot.
