Instructions
- 1
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- 2
In a large bowl, whisk together flour, granulated sugar, brown sugar, cocoa powder, baking powder, baking soda, salt, cinnamon, and nutmeg.
- 3
In a separate bowl, mix the vegetable oil, eggs, and vanilla extract until well combined.
- 4
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- 5
Fold in the grated carrots, and if you're using them, add the chopped nuts and chocolate chips.
- 6
Divide the batter evenly between the prepared cake pans.
- 7
Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- 8
Allow the cakes to cool in the pans for about 10 minutes, then transfer them to wire racks to cool completely.
- 9
Once cooled, you can frost with a chocolate ganache or cream cheese frosting if you wish, but it’s delicious on its own too!
This delightful cake is a wonderful blend of moist, spiced carrots and rich cocoa. The combination may sound unusual, but it results in a beautifully balanced flavor that's sure to impress!
