Ingredients
Instructions
- 1
Heat the oven to 175°C/350°F. Grease and line a 20-cm round cake pan—or use a slightly larger pan for a shorter cake.
- 2
Whisk together the flour, coconut powder, cardamom, and baking powder.
- 3
In another bowl, whisk the eggs, honey, oil, vanilla, and milk or water until smooth. Don’t taste the raw batter, sweetheart.
- 4
Fold the dry ingredients into the wet ingredients just until combined. Overmixing can make the cake heavy.
- 5
Pour into the pan and smooth the top. Bake for 38–45 minutes, checking the center. If wet batter remains, continue baking in 5-minute intervals; do not serve until fully cooked through.
- 6
Cool in the pan for 15 minutes, then transfer to a rack and cool completely before slicing.
