Ingredients

680 g boneless, skinless chicken breast, sliced
2 tbsp olive oil
2 tsp smoked paprika
1 1/2 tsp ground cumin
1 tsp chili powder
1 tsp garlic powder
1 tsp kosher salt
1/2 tsp black pepper
2 bell peppers, sliced
1 large onion, sliced
600 g cooked brown rice
1 can black beans, drained and rinsed
150 g Greek yogurt
Juice of 1 lime, divided
1 avocado, diced
120 g cherry tomatoes, halved
1/4 cup chopped cilantro

Instructions

1
Mix the chicken with 1 tbsp olive oil, paprika, cumin, chili powder, garlic powder, salt, and pepper.

Stir the yogurt with half the lime juice and set aside. This sauce is cool, but the flavor is strong!

Heat a large skillet over medium-high heat. Cook the chicken, turning occasionally, until the center reaches **74°C/165°F on a food thermometer**.

Remove the chicken. Add the remaining oil, peppers, and onion. Cook until lightly charred and tender.

Warm the black beans and rice separately.
6
Build four bowls with rice, beans, chicken, peppers, onion, avocado, tomatoes, and cilantro. Finish with lime juice and yogurt sauce.
7
Serve immediately and attack the meal like a champion, my friend!
