Cheesy Quesadillas

There's nothing quite like the melty goodness of a quesadilla! These cheesy delights can be customized with various fillings, making them perfect for sneaky veggies or leftover meats. Perfect for a cheerful lunchbox!
Ingredients
- 4 flour tortillas
- 2 cups shredded cheese (cheddar, mozzarella, or a blend)
- 1 cup cooked chicken, diced (optional)
- 1 cup bell peppers, sliced (optional)
- 1/2 cup onion, sliced (optional)
- 1 tablespoon olive oil or butter
- Salsa (for dipping)
- Sour cream or guacamole (optional, for serving)
Instructions
- Heat a skillet over medium heat and add olive oil or butter.
- Place one tortilla in the skillet and sprinkle half of the shredded cheese evenly on top.
- If using, sprinkle the diced chicken, bell peppers, and onion over the cheese.
- Top with another tortilla and cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese is starting to melt.
- Carefully flip the quesadilla using a large spatula and cook for another 3-4 minutes on the other side, until it’s golden and crispy.
- Remove from heat and let it cool slightly. Cut into wedges or triangles for easy eating.
- Serve with salsa, sour cream, or guacamole on the side.
