These scrumptious pumpkin oatmeal cookies are perfect for autumn baking. They're chewy, packed with warm spices, and sweetened naturally. You won’t miss the sugar one bit!
Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix the Wet Ingredients: In a large bowl, combine the pumpkin puree, unsweetened applesauce, melted coconut oil, vanilla extract, and maple syrup (or honey). Mix until smooth.
Combine Dry Ingredients: In another bowl, whisk together the rolled oats, whole wheat flour, baking soda, cinnamon, nutmeg, ginger, and salt.
Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. If you'd like to add chocolate chips or walnuts, fold them in now.
Scoop the Cookies: Use a spoon or cookie scoop to drop dollops of the dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
Bake: Bake in the preheated oven for 12-15 minutes or until the edges are golden brown. The cookies will remain soft as they cool.
Cool & Enjoy: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy the cozy, spiced goodness!
