Ingredients:
- 8 oz (225 g) fettuccine or pasta of choice
- 1 lb (450 g) boneless, skinless chicken breast, diced
- 2 cups fresh broccoli florets
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper, to taste
- 1 tsp Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions:
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Add the broccoli florets in the last 3 minutes of cooking. Drain and set aside.
- Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced chicken, season with salt, pepper, and Italian seasoning, and cook until golden-brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Make the Alfredo Sauce: In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Cook for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer, stirring constantly. Slowly whisk in the Parmesan cheese until melted and the sauce becomes creamy. Season with more salt and pepper if needed.
- Combine Ingredients: Add the cooked chicken and pasta to the sauce, tossing to combine. Stir in the broccoli, making sure everything is nicely coated in the sauce.
