This biryani captures all the comforting flavors of the curry, layered with spiced rice for a delightful one-pot meal!
Ingredients:
- 1 lb (450g) chicken breast, diced
- 1 large sweet potato, peeled and cubed
- 1 green pepper, chopped
- 1 cup frozen peas
- 1 cup frozen carrots
- 1 pack of microwave rice (about 250g)
- 2 tablespoons curry powder
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
- Salt and pepper, to taste
- Fresh cilantro (optional, for garnish)
- 1-2 cups chicken or vegetable broth or water
Cooking Instructions:
- Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.
- Brown the Chicken: Add the diced chicken to the pot and cook until lightly browned, about 5 minutes.
- Add Spices: Sprinkle the curry powder over the chicken and stir to coat, cooking for 1-2 minutes until fragrant.
- Incorporate Vegetables: Add the cubed sweet potato, green pepper, frozen peas, and frozen carrots to the pot. Mix well.
- Add Liquid: Pour in enough broth or water to just cover the chicken and vegetables. Bring to a gentle boil.
- Simmer: Cover the pot and let it simmer for about 10-15 minutes, or until the sweet potatoes and chicken are cooked through and tender. If using cornstarch for thickening, add it now and stir.
