- 2 cups cooked rice (preferably day-old for best texture)
- 1 cup cooked chicken, diced
- 1 cup mixed vegetables (like peas, carrots, and bell peppers)
- 3 green onions, chopped (white and green parts)
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional, for extra depth)
- 2 eggs, lightly beaten
- 2 tablespoons vegetable oil (or sesame oil for added flavor)
- Salt and pepper to taste
- Optional: sesame seeds for garnish
Cooking Instructions
- Heat a large skillet or wok over medium-high heat and add the vegetable oil.
- Add the minced garlic and white parts of the green onions to the pan, cooking until fragrant (about 30 seconds).
- Add the diced chicken and mixed vegetables to the skillet. Stir-fry for about 3-4 minutes, until the vegetables are just tender.
- Push the chicken and vegetables to one side of the skillet, and pour the beaten eggs into the empty side. Scramble the eggs until fully cooked, then mix with the chicken and vegetables.
- Add the cooked rice to the skillet, breaking up any clumps. Stir everything together.
