This dish is a perfect blend of flavors and textures, with tender chicken and sautéed zucchini. It’s quick to make and can be a fantastic weeknight meal.
Ingredients:
- 2 large chicken breasts, boneless and skinless
- 2 medium zucchinis, sliced into half-moons
- 3 cloves garlic, minced (optional)
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
- Grated Parmesan cheese (optional for serving)
Instructions:
- Prepare the chicken: Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
- Cook the chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside to rest.
- Sauté the zucchini: In the same skillet, add the remaining olive oil and garlic (if using). Sauté for about 30 seconds until fragrant. Then add the sliced zucchini and a pinch of salt and pepper. Cook for about 5-7 minutes, until the zucchini is tender but still crisp.
- Combine: Slice the cooked chicken and add it back into the skillet with the zucchini. Toss to combine and let it heat through for an additional 2 minutes.
- Serve: Garnish with fresh basil or parsley, and serve with grated Parmesan cheese if desired.
Flavor Profile: This dish combines the savory flavors of chicken with the fresh taste of zucchini, enhanced by garlic and aromatic Italian herbs. The optional cheese adds a rich, umami touch.
