Chickpea and Sardine Curry with Squash

This hearty curry combines the creaminess of chickpeas, the richness of sardines, and the sweet earthiness of squash. Perfect for a comforting meal, it's also low in carbs while still being packed with flavor.
Ingredients
- 1 can of chickpeas, drained and rinsed
- 1 can of sardines in olive oil, drained
- 2 cups of frozen squash, thawed and diced
- 1 medium onion, finely chopped (if available)
- 2 cloves of garlic, minced (if available)
- 1 inch piece of ginger, grated (if available)
- 1 can of diced tomatoes (or fresh tomatoes, if preferred)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt and pepper to taste
- Olive oil for cooking
- Fresh cilantro for garnish (if available)
Cooking Instructions
- Heat a generous drizzle of olive oil in a large pan over medium heat.
- If using, add cumin seeds and allow them to sizzle for about 30 seconds until fragrant.
- Add the chopped onion and sauté until translucent, about 5 minutes. If not using onion, skip to the next step.
- Stir in the garlic and ginger, cooking for another minute until aromatic.
- Add the diced squash to the pan. Cook for about 5 minutes, stirring occasionally.
- Add the chickpeas, diced tomatoes, coriander powder, turmeric powder, and salt and pepper. Stir well to combine and let it simmer for about 10 minutes.
- Finally, gently fold in the sardines and garam masala. Cook for another few minutes until heated through.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh cilantro if you have it.
