Cinnamon Almond Granola

Ingredients
- 2 cups rolled oats
- 1 cup sliced almonds
- 1/2 cup pumpkin seeds
- 1 tablespoon ground cinnamon
- 1 teaspoon ground cardamom
- 1/2 teaspoon salt
- 1/4 cup honey
- 2 tablespoons olive oil
- 1/2 cup dried grapes (raisins)
Instructions
- Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, sliced almonds, pumpkin seeds, ground cinnamon, ground cardamom, and salt. Mix well.
- In a small saucepan, warm the honey and olive oil over low heat until well combined. Pour the honey mixture over the dry ingredients and mix until everything is evenly coated.
- Spread the granola mixture onto the prepared baking sheet in an even layer.
- Bake for 20-25 minutes, or until the granola is golden brown and fragrant. Make sure to stir the granola every 10 minutes to ensure even baking.
- Remove the baking sheet from the oven and let the granola cool completely. It will become crunchy as it cools.
- Once the granola has cooled, stir in the dried grapes (raisins) as an extra touch of sweetness.
- Transfer the granola to an airtight container and store at room temperature for up to 2 weeks.
