Ingredients
Instructions
- 1
In a large pot or Dutch oven, heat 2 tablespoons of garlic and onion infused olive oil over medium-high heat.
- 2
Season the beef cubes with salt and pepper, then add them to the pot. Sear the beef until browned on all sides, about 5-7 minutes. Remove and set aside.
- 3
In the same pot, add the remaining tablespoon of garlic and onion infused olive oil.
- 4
Stir in the tomato paste, thyme, and bay leaf, cooking for another minute.
- 5
Return the beef to the pot and add the carrots, potatoes, and beef broth. Bring to a boil.
- 6
Reduce the heat to low, cover, and simmer for about 1.5 to 2 hours, or until the beef is tender.
- 7
In a small bowl, mix the corn starch with cold water until smooth. Once the stew is done simmering, stir the corn starch mixture into the stew.
- 8
Cook for an additional 5-10 minutes, stirring periodically until the stew has thickened.
- 9
Taste and adjust seasoning with salt and pepper, if needed.
- 10
Serve hot, garnished with fresh parsley.
