Classic Parmesan Herb Risotto

There's something so heartwarming about a pot of risotto simmering on the stove. This classic recipe combines the creamy richness of arborio rice with the nutty flavors of parmesan and fresh herbs. Perfect for a cozy dinner!
Ingredients
- 1 cup arborio rice
- 4 cups vegetable or chicken broth
- 1 cup dry white wine (optional, you can use more broth instead)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup grated parmesan cheese
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- ½ cup fresh herbs (like parsley, basil, or thyme), chopped
- Optional: a squeeze of lemon juice for brightness
Cooking Instructions
- In a saucepan, heat the broth and keep it warm over low heat.
- In a separate large saucepan, add olive oil and butter over medium heat. Once melted, add the finely chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
- Add the arborio rice to the onion and garlic mixture, stirring continuously for about 2 minutes until the rice is slightly toasted.
- Pour in the white wine (if using) and stir until it's mostly absorbed by the rice.
- Begin adding the warm broth one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle. This process usually takes around 18-20 minutes.
- Once the rice is creamy and al dente, remove the pan from heat. Stir in the grated parmesan cheese and chopped fresh herbs. Season with salt and pepper to taste. If desired, add a squeeze of lemon juice for an extra pop of flavor.
- Serve immediately, garnished with additional herbs and grated parmesan if you wish!
