Classic Slow Cooker Pot Roast with Gravy

Ingredients
- 3 to 4 pounds beef chuck roast
- 4 medium potatoes, cut into chunks
- 4 large carrots, sliced
- 1 onion, quartered
- 4 cups beef broth
- 2 tablespoons Worcestershire sauce

- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- Salt and pepper, to taste
- 3 tablespoons cornstarch (for thickening gravy)
- 3 tablespoons water (for thickening gravy)
Cooking Instructions
- Prepare the Slow Cooker: Place the potatoes, carrots, and onion at the bottom of the slow cooker.
- Season the Meat: Pat the chuck roast dry with paper towels, season generously with salt and pepper, and sear in a skillet over medium-high heat until brown on all sides (optional but adds flavor).
- Combine Ingredients: Place the seared roast on top of the vegetables. In a bowl, mix the beef broth, Worcestershire sauce, garlic, thyme, and rosemary, then pour this mixture over the roast.
- Cook: Cover the slow cooker and cook on low for 7-8 hours or until the meat is tender and shreds easily with a fork.
- Make Gravy: Once done, remove the roast from the slow cooker and cover it to keep warm. Strain the cooking liquid into a saucepan. In a small bowl, mix cornstarch and water to create a slurry. Bring the liquid to a simmer and stir in the cornstarch mixture, cooking until thickened to your desired consistency.
- Serve: Slice the pot roast and serve with the vegetables, drizzled with the rich gravy.
