Ingredients
- 2 cups cooked rice (preferably a day old)
- 1 cup chole (chickpeas), cooked and spiced
- 1 medium onion, finely chopped
- 1-2 green chilies, slit (adjust based on spice preference)
- 1 bell pepper, diced (any color)
- 1 cup mixed vegetables (like peas and carrots)
- 3-4 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon red chili powder (adjust to taste)
- Salt, to taste
- 2 tablespoons oil (vegetable or mustard oil)
- Fresh coriander leaves, chopped (for garnish)
- Lemon wedges (optional, for serving)
Cooking Instructions
- Heat oil in a large pan or wok over medium heat. Add the cumin seeds and let them sizzle.
- Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and grated ginger; cook for about a minute until fragrant.
- Add the slit green chilies and diced bell pepper; sauté for another 2-3 minutes until the bell pepper is tender.
- Toss in the cooked chole along with red chili powder, garam masala, and salt. Mix everything well and let it cook for about 5 minutes, allowing the flavors to meld together.
- Gently fold in the cooked rice and mixed vegetables. Stir well to combine, ensuring the rice is coated with the spicy mixture.
- Cook for an additional 3-4 minutes, stirring occasionally, until heated through.
- Garnish with fresh coriander leaves, and serve hot with lemon wedges on the side for that zesty punch!
